Starters

  • Duck foie gras terrine marinated in Pommeau de Normandie
    Caramelized apple cubes, toasted cider slice of country bread
     

  • Bavarian salmon lightly smoked at the Prieuré
    Blinis and whipped cream with horseradish, olive oil, diced tomatoes and chopped chives
     

  • Chef 's suggestion, upon return from the market

Main courses

  • Filet of turbot fried unilaterally, fricassee of Green Lentils of Berry with smoked bacon
    Vegetable brunoise, reduced fish smoke and full-bodied meat juice
     

  • Roasted scallops, caramelized endives with honey
    Sea Juice and Citrus Reduction

  • Piece of beef fillet (French Origin) pan-fried with black pepper from Kampot
